- 100g Sweet potato, peeled
- 20g Brown sugar
- 60g Olive oil
- Pre-heat oven to 200°C /fan 180°C/gas mark 6.
- Cut sweet potato in to thin fries.
- In a large bowl mix together olive oil and brown sugar.
- Add fries to mixture and coat.
- Place fries on a greased baking tray.
- Cook for 35-45 minutes until golden and crispy.
