  • 120g Pancake batter
  • 120g Banana flesh, sliced (Phe 43mg)

Baking Mix

  1. Sift all ingredients into a bowl and mix.
    Pancake Batter
  2. Place the baking mix, baking powder, baking soda, salt, and sugars into a food processor and blitz for 30 seconds, until butter is evenly distributed and mix resembles sand. Alternatively, place the ingredients into bowl. Using fingertips rub butter into mixture until evenly incorporated and mixture resembles sand.
  3. Place pancake batter into medium sized bowl. Whisk together rice milk and lemon juice. Add to mix, stirring gently until combined

Mini Banana Fritters

  1. Coat banana slices with pancake batter.
  2. Place corn oil into non-stick frying pan and heat on a high heat
  3. Lightly fry batter coated banana slices until golden brown.
