Mushroom Tart

In a bowl, add the Fate Low Protein All-Purpose Mix and margarine; using your fingertips mix together until the mixture resembles coarse breadcrumbs.

Add a little water to the mixture and combine into a dough. Leave to rest for 10 minutes.

Place the dough onto a clean, dusted work surface and knead for one minute into a smooth pastry ball.

Using a rolling pin, roll the pastry out between two pieces of grease proof paper to ½ cm thickness.

Remove the top sheet of greaseproof paper.

Preheat the oven to 180°C fan/200°C/gas mark 6.

Lay the pastry onto the lined baking tray and trim to size.

Mix the tomatoes, basil and garlic and spread onto the pastry base.

Top with the mushrooms, red onions and peppers and brush with the butter.

 Bake for 20 minutes or until all the vegetables are soft and the pastry is golden brown.

 Serve with permitted salad or extra vegetables

  • For the pastry
  • 125g Fate Low Protein All-Purpose Mix (plus extra for dusting)
  • 60g Soft margarine
  • Cold water
  • 2 tbsp Tomato puree
  • 1 tsp Dried Italian herbs
  • 30ml Water
  • Spray oil
  • For the filling
  • 9 Cherry tomatoes, finely chopped
  • ½ Bunch basil, finely chopped
  • 1 Garlic clove, crushed
  • 8 Mushrooms, thinly sliced
  • 1 Red onion, peeled and thinly sliced
  • ½ Green pepper, deseeded and thinly sliced
  • ½ Red pepper, deseeded and thinly sliced
  • ½ Yellow pepper, deseeded and thinly sliced
  • 20g Butter, melted
  • You will need a lined baking tray.
