Brioche

  • RECIPE MAKES: 8 mini rolls
  • PREP TIME: 20 minutes (plus 3-4.5 hours resting time)
  • COOK TIME: 25-30 minutes

In a measuring jug, mix the ProZero and the yeast. Allow to stand for 5 minutes.

In the electric mixer, place the Fate Low Protein All-Purpose Mix, sugar, and salt.

Mix at low speed and add the olive oil.

Gradually add the yeast and ProZero mixture and let the machine combine these at a low speed for 5 minutes.

Turn up the mixer speed to high and mix for 5-10 minutes or until the dough comes off the edges of the mixing bowl and a ball is formed around the hook.

Place the ball of dough into a bowl. Cover and let it rise in a warm place for 1.5-2 hours, until doubled in size.

Press your fist into the dough and then put it in the fridge for 30 mins – 1 hour.

Take out the dough, press your fist into it again and place it on to dusted work surface.

Divide the dough into 6 equal pieces and roll into balls. Place the balls into a pre-oiled loaf tin.

Allow to rise for a further 1-1.5 hours and brush with melted butter.

Preheat the oven to 160°C fan/180°C/gas mark 4 then bake for 25-30 minutes until the brioche is lightly golden.

  • 260ml ProZero, room temperature
  • 7g Dried yeast
  • 380g Fate Low Protein All-Purpose Mix (plus extra for dusting)
  • 60g Brown sugar
  • 4g Salt
  • 70ml Olive oil
  • 15g Unsalted butter, melted
