Top Tip!

These low protein christmas cupcakes are so much fun to make for adults and children! These Santa Cupcakes are exchange free and ideal for those on a low protein diet.

Ingredients

For cupcakes:

  • 50g Sugar
  • 50g Butter
  • 100g Fate Low Protein All-Purpose Mix
  • 1 tsp Baking powder
  • 75ml ProZero
  • 1 tsp Egg replacer
  • 1 tsp Vanilla essence

For decorations:

  • 200g Betty Crocker Vanilla Buttercream Style Icing
  • 10g Freeze dried raspberry pieces
  • 100g Freedom mallows vegetarian mini pink and white vanilla marshmallow bites
  • 12 Raisins
  • 6 Red Skittles

Method

  1. Preheat oven to 180°C/fan 160°C/gas mark 5.
  2. Cream together the sugar and butter in a bowl.
  3. Add the Fate Low Protein All-Purpose Mix and the baking powder and rub together with your hands until it resembles breadcrumbs.
  4. In a separate bowl, mix together the ProZero, egg replacer and vanilla essence.
  5. Add the ProZero mixture to the breadcrumb mixture and mix until well combined.
  6. Spoon the mixture evenly into the cup cake cases.
  7. Bake in the oven on for 25 minutes.
  8. Remove from the oven and allow to cool.
  9. Once cooled, spread a layer of Betty Crocker Vanilla Buttercream
  10. Style Icing onto the cupcakes using the back of a spoon.
  11. Sprinkle raspberry pieces onto one third of the surface of icing to resemble Santa’s hat. Repeat with all cupcakes.
  12. Place the mini marshmallows around the bottom of the hats and around the rest of the cupcakes to resemble beards.
  13. Place two raisins under the hat to resemble eyes.
  14. Place a Skittle under the raisins to resemble a nose.
