- 100g Low protein pasta, cooked according to packet instructions and cooled
- ½ Avocado, diced into 1cm chunks
- 30g Tomatoes, chopped into 1cm chunks
- 20g Spring onions, finely sliced
- 30g Mixed peppers, finely diced
- 1 tbsp Pesto (see recipe)
- 50g Mayonnaise
- In a bowl, mix all ingredients until combined.
