Top Tip!

This low protein christmas recipe is so simple and quick but looks fantastic. These Carrot, Cucumber and Pepper Trees are exchange free and ideal for those on a low protein diet.

Ingredients

  • 1 Carrot, cut into 3 x 3cm chunks
  • ½ Cucumber
  • 1 Yellow pepper

Method

  1. Spear a carrot chunk to the bottom of each skewer.
  2. Using the speed peeler, peel thin, long strips off the cucumber.
  3. Gently gather the cucumber strips to form ruffles, and thread onto the skewers to resemble a tree.
  4. Cut 3 small star shapes out of the pepper and skewer these on top of the tree.
