Vegetable Burgers

  • RECIPE MAKES: 8 burger patties
  • PREP TIME: 15 minutes
  • COOK TIME: 10 minutes
Step 1

Roughly chop zucchini, carrot and onion. Place these vegetables along with the pumpkin into a food processor and pulse until all are finely grated and combined. Place vegetables into a mixing bowl with the parsley, mixed herbs, salt and pepper. Stir to combine.

Step 2

To vegetable mixture add ½ of the Fate Mix; stir again to combine. Add remaining Fate mix; gently stirring until all the Fate Mix is absorbed into the vegetables.

Step 3

Dust hands with a little of the extra Mix. Gently take “dough” out of the bowl and shape into 1 large ball. Cut this into halves and then quarter each half. You will now have 8 even-sized portions.

Step 4

Heat 1 Tbs of the oil in a medium sized non-stick frying pan. Take one of the portions; roll into a ball, slightly flatten and place into the pan. Repeat with 3 more portions. Fry for 2-3 minutes; until golden brown, flip over then fry on the other side for a further 2-3 minutes (you may like to flatten the burgers a little more after flipping). Remove from pan and repeat this step with remaining burger portions.

 

Serving suggestions:

Lunch on the Run
For a quick and easy lunch try making a traditional “burger”; spread 2 slices of Fate* bread (see recipe for Fate bread in this section) with a little margarine and then sandwich together with 1 heated vegetable burger, salad leaves and other salad vegetables such as sliced tomato, cucumber and 2 tsp BBQ or tomato sauce. This also makes for a great portable lunch; the bread, burger, salad leaves and sauce can all be packed in the morning for assembling later in the day – simple!

 

Top tip:

Leftover burgers freeze well.   Allow to cool, wrap in cling film and store in the freezer.   To use simply defrost burger and reheat in the oven, under a hot grill or in the microwave.  

Try using different vegetables; capsicum, eggplant and mushrooms can replace the zucchini and carrot.  Spices can also be changed; try paprika with a little lemon juice instead of the mixed herbs if you prefer.
