Pre-heat oven to 180 C.
Cut zucchini in half, lengthwise; scoop out middle with spoon or melon baller, set aside.
In a medium bowl, combine capsicum, tomato, garlic, oregano and black pepper.
Fill each zucchini with the mixture; distributing evenly.
Place zucchinis in a large baking dish; bake for 15mins.
Top with feta cheese; continue to bake for a further 5mins. or until cheese has slightly browned.
Remove from oven, sprinkle with parsley and serve.
